One of my early favorities was Freedy the talking pig books.
That must have ben in the later 1940s.
A bit before I read Destination Moon and the books featuring
King Arthur and Robin Hood.
Then of course we had all sorts of comic books featuring
talking animals and when TV came along talking cars, mules and
horses.
Myths and legends are full of wise animals and other non-hominids. So
is SF with aliens and robots.

According to WP the Mr. Ed showrunner wanted to do a Francis show, but
the rights weren't available so he licensed another talking horse IP.

Framcis the Talking Mule was an Army mule and had learned
a lot from his service.

I'm not sure Pachelbel's Canon (which I do like) is SF either.....
Well talking animals are certainly speculative.
But the Island of Dr.Moreau and how that bad man blended humans
and animals. Dr.Doolittle could talk to the animals and they to he.

And Cordwainer Smith was not the first to use uplifted animals
like C'Mell to stir a storylline.

Other folks have uplified animals, David Brin I think
though my ankle hurts to much to walk across the room and
get a check on that then I remember I was connected to the
WWW and checked from my comfy task chair. Uplife Wars series
is by David Brin.
